Protein Rich Chocolate Granola

Eggs are a brilliant fertility-supporting food because they’re rich in choline, a nutrient that plays an important role in healthy conception and pregnancy.
But what if you’re not a big fan of eggs? My High Protein Chocolate Granola is a simple way to include them in your diet without the usual egg flavour.
It’s delicious served with yoghurt, your favourite milk, or enjoyed on its own as a snack, and you’d never know the eggs were there.
Vegetarian, can be adapted for gluten & dairy free
Ingredients
1 banana
1 tbsp cacao powder
1 tbsp Greek yoghurt or dairy free alternative
Ground flaxseeds
Chia seeds
Sprinkling of cinnamon
2 eggs
150g steel cut oats (gluten free if desired)
Add a handful of almonds, hazelnuts, walnuts, pecan nuts, roughly chopped
Preheat the oven to 180°C/160°C fan.
In a blender whizz up the banana, cacao powder, Greek yoghurt, some ground flaxseeds, chia seeds, cinnamon & 2 eggs.
Add the mixture to a bowl with the oats and combine, you can also add chopped nuts (walnuts, almonds, hazelnuts).
Fry the mixture in a hot pan with some melted coconut oil.
Separate into smaller pieces and then bake in the oven for 15 minutes until crunchy and golden.
Delicious with yoghurt, your favourite milk or just as a snack,
