Protein Rich Chocolate Granola

Eggs are a fabulous fertility food as they contain lots of choline which is essential for healthy conception and pregnancy. But what if you're not a big fan of eggs? Try my High Protein Chocolate Granola recipe. It's a great way of getting eggs into your diet without the egg taste. It's delicious with yoghurt, your favourite milk, or just as a snack, and you won’t notice the eggs!

Vegetarian, can be adapted for gluten & dairy free

 

Ingredients

1 banana

1 tbsp cacao powder

1 tbsp Greek yoghurt or dairy free alternative

Ground flaxseeds

Chia seeds

Sprinkling of cinnamon

1-2 eggs

Enough steel cut oats to make a thick consistency (gluten free if desired)

Add a handful of almonds, hazelnuts, walnuts, pecan nuts, roughly chopped

  1. Preheat the oven to 180°C/160°C fan.

  2. In a blender whizz up the banana, cacao powder, Greek yoghurt, some ground flaxseeds, chia seeds, cinnamon & 1-2 eggs.

  3. Add the mixture to a bowl and add enough oats (steel cut) until it thickens, you can also add chopped nuts (walnuts, almonds, hazelnuts).

  4. Fry the mixture in a hot pan with some melted coconut oil.

  5. Separate into smaller pieces and then bake in the oven for 15 minutes until crunchy and golden.

  6. Delicious with yoghurt, your favourite milk or just as a snack,
