Grain Free Granola

Many shop bought granolas are high in sugar, but this version is sugar free and is rich in protein and healthy fats so will keep your blood sugar stable and you full until lunch. It contains pumpkin seeds which are a good source of B vitamins, omega 3 fats and zinc, important for fertility, particularly sperm health. It's also grain free which can be beneficial for helping to lower inflammation in the body.

 

Enjoy this granola with Greek or natural yogurt, a dairy free alternative, or milk of your choice. Add some berries to up your antioxidants; raspberries, blueberries and blackberries go particularly well. The recipe makes a large batch so you'll get plenty of servings.

Vegetarian, gluten free, dairy free & grain free

 

Ingredients

250g almonds, hazelnuts, walnuts, pecan nuts, roughly chopped

100g desiccated or flaked coconut

50g pumpkin seeds

50g sunflower seeds

50g ground flaxseed

1 tsp ground cinnamon

100g almond butter

1tsp vanilla extract

50g coconut oil

1 large egg white

  1. Preheat the oven to 180°C/160°C fan.

  2. Combine all the dry ingredients (except the cinnamon) into a large bowl.

  3. In a small sauce pan melt the coconut oil and combine with the almond butter, cinnamon and vanilla essence.

  4. In a separate bowl beat the egg white until it forms stiff peaks.

  5. Fold the almond butter mixture into the dry ingredients until combined, then fold in the egg white.

  6. Spread the mixture onto a lined baking tray evenly and bake for 20mins, or until golden.

  7. Once cool, crumble into clusters. Store in an airtight jar, and consume within 1-2 weeks.
